Of those four cookies, my favorite ones are the peanutbutter ones. My favorite kind of cookies are sugar cookies but those haven't been made yet. Mmm. I love sugar cookies. Of those though, I love the peanutbutter cookies followed next by the chocolate chip ones.
The recipes that I'm posting isn't of any of those cookies though, hehe. I'm not sharing mama's recipes with anyone or even asking if I can. The recipes I'm posting are recipes from friends. Yes, recipes as in plural. I couldn't decide so I decided why not do more than one? Hopefully that's not breaking any cookie exchange rules or anything, lol.
The first one is a recipe for Peanut Butter Chocolate Chip Cookies one of my guy friends makes. The recipe is really basic and I imagine it's like most other ones you would find on any website or in a cookbook.
Ingredients:
* 1/2 cup butter, softened
* 1/2 cup crunchy or smooth peanut butter
* 1/2 cup granulated sugar
* 1/2 cup brown sugar, firmly packed
* 1 egg
* 1 1/4 cups all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1 tablespoon vanilla extract
* 1 cup semisweet chocolate chips
Preparation:
Preheat oven to 375°.
Cream the butter, peanut butter, sugars and vanilla extract until light. Add the egg and mix until fluffy.
Blend the flour, baking powder, baking soda and salt together well. Add these dry ingredients to the butter mixture. Add the chocolate chips.
Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 10-12 minutes at 375°. Remove to wire racks to cool.
Next, Chocolate Mint Cookies. My friend Fangs had a girlfriend that made these for him a few times and then after they broke up, he got the recipe for them from her.
Ingredients:
* 1 cup sugar
* 1/2 cup light brown sugar, firmly packed
* 3/4 cup butter, room temperature
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 teaspoon peppermint extract (optional)
* 2 tablespoons water
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 6 ounces Andes Chocolate Mint Candies
* pecan halves
Preparation:
Preheat oven to 375°.
In a large bowl, cream sugars and butter. Add eggs, vanilla, and water; beat well. Add peppermint extract and beat for a minute if you decide to use mint extract.
Combine flour, baking soda, and salt; add flour mixture gradually to egg mixture; stirring to mix well. Chill dough for at least 4 hours or overnight. Wrap each mint completely in cookie dough.
Place chocolate mint cookies 2 inches apart on lightly greased baking sheets and press a pecan half onto the top of each cookie. Pecan halves optional.
Bake at 375° for 7 to 9 minutes, or until cookies are golden brown. Remove to wire racks to cool.
My last recipe is one for White Chocolate Chip Cherry Cookies. A friend and I made these accidentally once a few years ago. I was drunk and he was tipsy, hanging out at his dad's house. We wanted some cookies and this former friend of mine was excellent in the kitchen so he decided to start cooking some up. He had intended to just make White Choc Macadamia cookies but I ended up tossing in almonds and the cherries just because I had them out munching on them and spur of the moment thought they'd be a good edition to the cookies, lol. We both ended up liking them, even the next day when we were sober. ;) It sounds a little odd but they weren't bad. You definitely have to like cherries obviously though, lol.
Ingredients:
* 1/2 cup butter, softened
* 1/2 cup sugar
* 1/4 cup light brown sugar, packed firmly
* 1 teaspoon vanilla
* 1 egg
* 1 cup all-purpose flour
* 1/4 teaspoon salt
* 1/2 teaspoon. baking soda
* 1 cup white chocolate chips
* 1 10 oz jar Maraschino cherries, mostly drained, leave at least 1 - 2 tablespoons cherry juice
* 1/4 cup lightly toasted almonds
* 1/2 cup chopped macadamia nuts
Preperation:
Preheat oven to 375.
Pull stems from cherries if they have them. Chop cherries in halves, fourths or pieces, whichever you prefer. Place cut cherries back in cherry juice.
Cream butter until light. Gradually add sugars, creaming well until blended. Beat in vanilla and egg.
Stir together flour, salt and baking soda. Add flour mixture to butter mixture, blending well.
Stir in chips, nuts and cherries including the juice.
Drop by level tablespoonfuls, 2 inches apart, onto un-greased cookie sheets. Bake at 375 degrees for about 12 minutes until golden.
Remove to wire racks to cool.
I really wanted to post a fourth recipe but the person I needed the recipe from hasn't got back to me yet. He's Hawaiian and they were a special coconut cream and pineapple number that his grandma and mom made every summer. They're so tasty but I haven't a clue what they're called so yeah, lol. I can't wait to see what everyone else has posted for the cookie exchange. =)
